Recipe of the Month - Jan's Meatloaf

INGREDIENTS
500gms organic minced beef1/4 cup onion - chopped
1/2 cup grated carrot
1/2 cup grated zucchini
1/2 tsp seaweed salt
2TBS fresh basil - chopped
1 organic free range egg - lightly beaten
1/4 cup rolled oats (for gluten intolerant try rolled amaranth or quinoa)
1/4 cup olives - chopped
1/4 cup tomato paste
1/4 cup homemade tomato sauce
METHOD
1. Preheat oven to 180C2. Mix all ingredients except the tomato sauce
3. Place the mixed ingredients into a loaf tin - flatten the top
4. Pour the tomato sauce on top and spread evenly
5. Bake for approximately 40 minutes
