Lamb Stew



Lamb Stew

Ingredients


Serves 4-6
You will need a pressure cooker for this recipe
2 Tablespoons butter
2 cloves garlic, crushed
500g organic lamb, diced
2 cubes beef stock
1 cup red wine
1 onion, quartered
2 cups roughly cut potatoes
1 cup roughly chopped carrot
1 cup roughly sliced celery
1 cup quartered mushrooms
2 bay leafs
1/4 cup finely chopped basil
2 tablespoons arrowroot flour
3/4 cup sour cream

Method


1. In a pressure cooker melt butter and saute garlic briefly over medium heat.
2. Add lamb and brown on all sides.
3. Add stock, wine, vegetables, bay leafs and basil.
4. Cover, turn heat to medium-high, increase pressure, then turn heat to low and cook for 1 hour.
5. Turn heat off and allow to stand for 15 minutes.

If you don't own a pressure cooker you may use a slow cooker over a period of 6 hours, but make sure you still follow method procedures 1 and 2.
