New trademark to ensure fresh olive oil

The Australian Olive Association has introduced a Code of Practice, which guarantees the authenticity and quality of certified Australian extra virgin olive oil. The new certification symbol will appear on bottles of extra-virgin olive oil at the deli or markets.

Unlike wine, extra virgin olive oil does not mature with age, so the fresher the better if you want to enjoy its flavours at their peak.
