Diabetes
In my book 'Changing Habits, Changing Lives' there are many references to diabetes and what diabetics can do to help their condition. Here is an excerpt from the chapter 'The Glycemic Index Made Easy':"the glycemic index is a method of measuring or ranking carbohydrates according to how they affect blood sugar levels. Until recently this rate has been ignored. The focus was more on fat levels within the blood rather than sugar, hence the low-fat diet. But you have to look at the big picture. It is imortant to look at all factors. It is also imortant to realise that the glycemic index is an average guide - not everyone will respond in exactly the same manner, and when food are combined the glycemic rate will vary significantly.
The lower the glycemic index, the more advantageous the food is to balancing blood sugar levels and, as a side effect, blood lipid levels. With high glycemic index foods, the chances are increased of spikes in blood sugar levels from extreme highs (hyperglycemia) to extreme lows (hypoglycemia), and that's where we come unstuck. The art of keeping blood sugar levels constant, with the help of the two hormones insulin and glucagon, is part of preventing diabetes and heart disease."
