Maple, Apple and Walnut Muffins

Ingredients
2 large (or 3 small) organic free range eggs beaten
100 g butter
175 ml pure maple syrup
350 g apples chopped
100 g fresh walnuts chopped
400 g organic unbleached spelt flour
1 tablespoon baking powder
1 teaspoon sea salt (optional - with dulse seaweed for iodine)
1 teaspoon cinnamon
1 teaspoon nutmeg
Method
1. Preheat oven to 350F (175C).
2. Cream eggs and butter in a bowl until light and fluffy.
3. Add pure maple syrup, apples and nuts.
4. Mix well. Sift in dry ingredients.
5. Stir until moistened.
6.Put into greased muffin tins.
7. Bake 20 to 25 minutes.
Makes 12 medium-sized muffins.
